With the 2026 edition of Tiramisu Day, the world classification of tiramisu variants arrives, developed by the Tiramisu Academy. The ranking arises - explains the Academy - from the need to give order, cultural dignity, and gastronomic recognition to the iconic dessert that represents Italy in the world. The ranking includes Classic, fruit, chocolate, hazelnut/pistachio, matcha tea, coconut, and Spiced. It’s easy to say tiramisu, but there are countless recipes and variations. 

On this occasion, the tiramisu with caramel popcorn and smoked salt created by pastry chef Tommaso Foglia is born, Pastry Chef of the Year 2022 for Gambero Rosso  and a teacher at the culinary school In Cibum, among the judges of Bake Off Italia. The dessert, a reinterpretation of one of the most famous sweets of the pastry chef, was presented in Rome. The tiramisu with caramel popcorn and smoked salt, called "Ti Porto Al Cinema," will remain on the menu for a year to celebrate the anniversary of Merisù Tiramisù. 

"Tiramisu - Foglia - is one of those things that everyone likes and the idea of being able to give my touch to such a delicious dessert excited and stimulated me right away, making me want to challenge myself and experiment based on one of my most beloved sweets."

Meanwhile, for the initiatives of World Tiramisu Day, a conference titled "Tiramisu: stories of sweets, traditions, and families" is scheduled in Treviso, a city accredited as the birthplace of the dessert, starting at 10:30 AM in the Salone dei Trecento, in Piazza dei Signori. From 2:30 PM, meeting in Piazza dei Signori, it is possible to participate in the Tiramisu Tour, "a short journey within Treviso to discover the places that contend for the paternity of Tiramisu, with the backstories of the dessert's history and the curiosities that arise when talking about this dessert."  The city, recognized as the cradle of the dessert, also hosts the Tiramisu World Cup.

Tiramisu was the most loved dessert at the Winter Olympic Games, where foreign athletes and fans discovered it, just think that the president of the International Paralympic Committee, Andrew Parsons, before closing the Games, thanked: "Thank you to the Italian people. Your passion, your generosity and your tiramisu have made these Games unforgettable."
